Mince Pies – Blogmas Day 23


Is there a sweet more festive than Mince Pies? Me thinks not… And store bought ones taste just fine, but it’s actually really easy to make them yourself. Plus, baking makes the entire house smell like christmas!


This really takes me back to baking with my mum. I don’t even know why, but ever since I can remember, baking has been my happy place. When I was little, I helped my mum and my grandmas and as soon as I was allowed to use the oven by myself, it was my escape from life, my way to calm down. And when they asked me at the beginning of treatment, what I enjnoyed doing, it was the only thing that came to mind. So I started taking time to bake again.


I’m sure, by now you’re all sick of me waxing on about this, but baking and cooking truly is like meditation. With the added bonus of delicious food at the end…


Mince Pies

2 cups all-purpose flour
pinch of salt
120g butter (softened)
2 tsp sugar
zest and juice of one orange
1 jar mince meat
powdered sugar to decorate

What to do:
Sift flour and salt together and knead in the butter. Mix in the sugar, zest and juice of an orange and wrap the dough in clingfilm. Chill for about half an hour.
Pre-heat the oven to 180°C. Roll out the dough on a floured surface until it’s about 2mm thick. Cut out circles a little bigger than your muffin tin with a glass. Roll out the rest of the dough again and cut out stars to put on top of the mince pies. Repeat this process until there is no dough left.
Put the dough circles into a greased muffin tin and form them, so that the sides are about half centimetre high and fill about one tbsp of mincemeat into each pie. Cover the pies with the stars.
Bake for about 30-35 minutes, then let them cool out in the tin for about 10 minutes. Get the mince pies out of the tin using a spoon, let them cool completely before sifting the icing sugar on top.
