I’m sorry I haven’t been uploading daily the past few days, but life has just been crazy. Uni work and therapy decided they needed to be extra exhausting so close to christmas. It happens… And because this happens sometimes, you might need a last-minute gift that doesn’t take a lot of time to make and you probably already have most of the ingredients at home. So this is for all the busy people, the forgetful people and for those friends that appreciate a practical gift that isn’t cookies.
You’re more than welcome to just use this as an inspiration and make any other savoury dish that can be layered in a glass jar. I chose this soup, because I thought the black/ red and green layers would look cool, since the contrast is so high. And it even looks kinda christmassy, don’t you think?
Curry Wild Rice and Lentil Soup
Layers in the glass:
1 cup red lentils
3/4 cup wild rice
2 tsp dried parsley
2 tbsp dried onion flakes
1/2 tsp garlic powder
1 tbsp curry powder
salt and pepper to taste
Mix together parsley, onion flakes, garlic, curry, salt and pepper. Then layer lentils, wild rice and the seasoning in whichever order you prefer. I divided the lentils and rice into two parts, just because I thought it looks better.
Make a gift tag or any kind of card to write the instructions on.
Instructions on the tag:
Fill the contents of this jar into an empty pot and add about 3 cups of water.
Bring the mixture to a boil, then reduce the heat and let the soup simmer for about 30 minutes or until the rice and lentils are tender. (Depending on what kind of lentils you used, the cooking time might actually be a lot shorter.)
Serve hot and enjoy!
