Champagne Popsicles

Yes, you read that right! You can now enjoy your bubbly and cool down at the same time.

We have had the hottest weather EVER for the last few days! I am definitely a summer person, so I always get really excited when those few hot days we get finally arrive! After a few days of the sun shining on my terribly insulated attic storey flat though, I’m considerably less excited. So how do you cool down college girls in approximately 45°C? (If we’re  not having a picnic, like we did here.) Although you could probably even take them on your picnic. If you eat them really fast. So basically, it shouldn’t be a problem. 😉

Right, you freeze the bubbly!

Let’s be honest, we wouldn’t really need a logical reason to sell us on these beautiful girls night items, but since I do fancy myself a healthy eater, I added loads of berries. (Raise your hand if you’re surprised I made yet ANOTHER recipe with berries! Yeah, I’m not either… You’ve got to make th most out of berry season…) So basically, this is a fruit salad and can therefore be consumed at any time of the day. Since it’s fruit, it also qualifies for that five-a-day challenge.

See, it’s healthy… or something like that.

It definitely is super easy though! All you need are berries or any other fruit you like and some champagne. I used raspberries and strawberries cause they’re my faves, filled them into my silicone popsicle moulds and topped them off with some dry champagne. (The cheap kind, cause I’m a poor student, but it’s still super tasty!) You could also add some flavoured champagne in the colour of your fruit, for example pomegranate flavoured champagne with berries or mango flavoured champagne with peaches.

Just pop them in the freezer for 3-4 hours and voilá, you’re a fancy AF event planner.

So get licking and enjoy the hot weather, cause we all know we’re  going to be complaining about the freezing weather again in no time… or at least I will.

Hope you enjoyed these boozy kids snacks!

Love, H.
